There is a fundamental basis of biology and chemistry that guides the fermentation process and enables the creation of consistently great beers.

Category 12’s head brewer and founder, Michael Kuzyk, has been brewing beer for nearly 20 years and has his doctorate in microbiology and biochemistry from UVic. But all work and no play makes… well, you know the rest. After leading the creation of several world-class research labs, he decided it was time to make his own – dedicated to the pursuit of exceptional beer.

The C12 Thesis

Bold beers for strong minds. With Michael’s continual tinkering, you can expect a continually expanding line of seasonal releases, including those that pay homage to our favourite big Belgians and hoppy Northwestern ales.

We make beers that we like to drink, and we’ve learned how to play nicely, we share!

Michael’s obsession with great beer, recipe optimization, and meticulous record keeping practices–honed during his research days–make him a brewer to be reckoned with.

Don’t Worry. I’m a Doctor.

Michael started brewing his own beer in the mid-1990s, during graduate studies. Hundreds of Untappd check-ins later, his passion for brewing finally prevailed and his wife Karen conceded to the inevitable.

In preparation for launching Category 12, they both travelled up and down the West Coast, visiting and talking to the very best brewmasters and building a beer-making syllabus that is sure to cement their uniquely precise place in this exciting industry.

The Future of the Brew

Michael experiments with a 50 L pilot brew bench that allows him to fine tune recipes that scale to our 1,500 L production capacity-and we have more than a few on the books. Our brewhouse is proudly made on the Island, just around the corner from the brewery. Specific Mechanical has made over 350 brewing systems over the last 25 years, and ours is the first one they will be able to walk over and enjoy in person.

But good beer doesn’t do any good if no one knows about it! Enter Jeff Kendrew, our Sales & Marketing Manager who is a Certified Cicerone® and co-founder of Victoria Beer Week. Jeff will be introducing you to Category 12 beers at your local pubs, liquor stores and festivals. Watch for him – but be careful as his passion is contagious!

At Category 12 Brewing, we value quality above all else. We only source the very best ingredients and all of our brewery equipment is Canadian-made by Specific Mechanical [link], located less than 1 km away from our brewhouse.

We brew in small batches, just 30 kegs at a time. This gives us optimum control over our product and allows us to fine tune our recipes, ensuring you get the best beer, every sip.

New Growth Pale AleNew Growth Pale Ale celebrates the return of locally crafted beer brewed with regionally harvested ingredients. Driftwood Brewery and Sartori Cedar Ranch have combined their savvy to craft a decidedly British Columbian pale ale. Sartori’s Centennial and Newport hops shine through in this refreshing session ale. Cheers!

Food Pairings

  • Salads with plenty of bitter greens (arugula, watercress, mustard greens)
  • Grassy cheeses like Bleu d’Auvergne, Reblochon and  Gruyere.
  • Seafood such as prawns, crab, halibut or cod.
 

Farmhand Saison

Farmhand SaisonOur interpretation of this Southern-Belgian farmhouse ale uses a partial sour-mash and an addition of freshly ground black pepper. We use a unique strain of yeast from Belgium to add further layers of spice and complexity to this rare style of beer.

Food Pairings

  • Walnuts, pecans, cheeses such as Trappist, Livarot, or Comte.
  • Beef, venison, mussels.
  • Root vegetables, resinous herbs (rosemary, marjoram, thyme).
  • Great for brazing.

White Bark Witbier

White Bark WitbierThis traditional Belgian-style wheat ale is brewed with the addition of freshly ground coriander and curacao orange peel. Hops are outshone by the wonderful floral aromas that dominate the nose of this dry and quaffable beer.

Food Pairings

  • Duck, goose, pork.
  • Thai curry, Indian curry.
  • Sweet potatoes, carrots, ginger, bell peppers.

Crooked Coast AltbierInspired by the original Alt-style beer of Dusseldorf, Crooked Coast brings together the aromas of German noble hops and Munich malt. Delicate malt-hop balance is the defining trait of this quintessential session beer!

Brewed with the hop aficionado in mind!

Fat Tug is a northwest style India Pale Ale with an intense hop profile with notes of grapefruit, mango melon and passion fruit. Sufficient malt is there to provide support. At 7 % alc/vol and 80+ IBUs this beer delivers on the promise to satisfy anyone with a thirst for all things hoppy!

Available in government and private liquor outlets and on tap in select pubs & restaurants.

Food Pairings

  • Enjoy as an aperitif as the bitterness and higher alcohol content will stimulate the appetite.
  • Great with spicy Asian or Mexican fare or other boldly spiced dishes.
  • Try it with shellfish or Sashimi!
  • Pairs well with pungent cheeses like Roquefort, Romano, cheddar, or washed-rind varieties.

Resting patiently in the wooden shadows was this creature of the night. Seldom seen, but whose presence was always respected by all life in the barnyard, this elusive predator was never captured.

Naughty Hildegard’s Extra Special Bitter

Naughty Hildegard ESB

Our take on the classic Extra Special Bitter (ESB). Brewed with heaps of Mosaic hops and luxurious Golden Promise malt, this unique ESB combines some new world hop character with a traditional malt profile!

Brewed to honor Hildegard Von Bingen, a 12th century Benedictine nun who allegedly was the first to record the use of hops as an ingredient in brewing beer. While this is open to some debate, we like Hildegard’s style and cant imagine beer without hops! This Extra Special Bitter has lots of hops! We hope that Hildegard would be proud. We sure are!

Thanks for your interest in peeking into life at Driftwood. Currently, all hands are “on deck”; by the mash tun, the bottling line, keg filler and deep in the cellar focusing on brewing our beautiful, hop & malt liquid. One day we hope to set up days, times, not to mention another, friendly, staff member who will be delighted to tour you through our Brewhouse.

About Driftwood

It seems like a lifetime ago; back in July of 2008, when Jason Meyer and Kevin Hearsum were given the keys to a dusty old industrial space in Rock Bay. Once we had dispatched the dirty mattress that blocked the door, we were ready to set to work building our dream!

The Wall

One of the first orders of business was to knock down a 20 foot high wall that was six sheets of drywall thick! The snowiness of the photo is because of the copious amount of dust we created.

Once we’d cleaned up the space we were ready for the arrival of the tanks! We bought our system third-hand from a brewery in West Yellowstone, Montana. Getting the tanks off the trucks and into the building was one of the most stressful days of our entire lives!

Then we had to paint them, all 640 of them.

Gary Lindsay joined the partnership in August bringing with him years of success promoting craft beer locally. He was a very welcome addition to the Driftwood family. The three amigos were ready to introduce their beers to Victoria and beyond!

The next year and a half was a steady grind with Jason, Gary and Kevin handling all the duties themselves! Kevin was doing all the production, as Gary kept adding new customers on a weekly basis. Jason did the deliveries and government tax stuff and shared the office duties with Gary. Needless to say these were three busy guys!

In the spring of 2010 the pace was getting to be a bit too much! We needed help! At last we could finally afford some relief, and we were fortunate to enlist the talents of Tim Fukushima. Kevin now had an accomplice on the production floor…Tim

We were selling quite a bit more beer in Vancouver than we expected, and all without a Sales Rep over there! When our friend Ian McKay offered to step in, we realized he would be a great addition to the Driftwood crew! Look out Vancouver here we come!

We had been growing at a pretty good rate, but with someone promoting us in Vancouver, beer sales there really took off! More assistance was required, and Gary was spending too much time taking orders in the office. Every day was a struggle to get on the road! At the end of May 2010, Justine Leonhardt took her place in the office, and became the first point of contact for our growing list of customers!

At that point we were running at full capacity. With the brewery as is was it could not produce any more beer! Time to order more tanks!

They brewery continued to grow at a steady rate and soon more tanks were added. Now the problem was that we were beginning to run out of room!

Justine decided to hit the road and go traveling for a few months; we were sad to see her go, but were very fortunate to find another great addition to the team: Justine Darnley! (We know, we are a weird crew who have an odd desire to have as many people working at the brewery with the same name as possible!)

Thanks to the efforts of our Chief Beer Conversion Architect, Ian McKay, sales in Vancouver had been expanding rapidly!

We decided it was time to have our own warehouse in the Lower Mainland, along with our own truck and Driver, so we could provide the same high standard of service that our customers in Victoria had enjoyed. An old friend, Chris Waterman took on the task!
