This seasonal, Belgian Style Saison is not for the faint of heart. Born in a pumpkin patch and raised in the brewery, this 9% bad boy is not your grandma’s pumpkin pie. Eight slaughtered pumpkins and a whole lotta spice were boiled in a cauldron of barley, hops and anything else we could find lying around. Fly orange with full patch.

Moon under water Brewery
A collaboration with Russ Huband and Jonas Björkman, this Berliner -Style Weiss is primary fermented with Lactobacillus until a precise PH is reached, secondary fermentated with Saccharomyces and bottle conditioned with Brettanomyces.

Unfiltered craft lager brewed with rice malts and sweet orange peel for a dry, refreshing finish. Welcome to the light side of craft beer.
4.2% ABV 14 IBU 1.003 FG
Pilsner's creepy uncle. Dark and complex, the most misunderstood of all lagers. Dark Munich malts and a litle roasted wheat give this brew a rich, vanilla, and nutty-sweet palate with a dry, rounded finish. Unfiltered as always. Maybe it's the long decoction mashes or the 5 week lagering time spent alone in the cold... or maybe he's just a complicated dude?
5.4% ABV 18 IBU 1.010 FG
A Canadian IPA for canadian craft beer connoisseurs. Citrusy, resinous, and piney it’s not arrogant or off-balanced just unfiltered and dry-hopped.
6.5% ABV 70 IBU 1.014 FG
Take one part saison yeast and one part Brettanomyces. Mix in light pilsner malt and finish with heaps of tropical fruit hops. Think Skittles in the attic.
7.0% ABV 35IBU FG 1.003
Brewed in the style of the great North German Pilsners. Saaz hops shine through Bohemian malts to produce a crisp, dry-hopped, and citrusy beer. Unfiltered, Decoction Mashed, Dry-Hopped, and lagered for 5 weeks. This ain't your father's pilsner.

Unlike every other beer we've brewed, this one follows some style guidelines. Why? Because in a land where big breweries produce bland, boring blonde ales and pass them off as Hefeweizens, something traditional needed to be done. Brewed with 70% weizen, decoction mashed, and open-fermented with hefe from Bavaria: This is Hefeweizen.

This brew was crafted with massive amounts of roasted wheat, Munich and chocolate malts, resulting in a stout like no other. A Bavarian weizen yeast creates the perfect ester profile while cocoa nibs and vanilla beans mellow out the finish of this indefinable brew. Victoria’s secret? Not for long…
Vic-to-ri-ous: Envincing moral harmony or a sense of fulfillment. Our pride and joy. Canadian wheat, German Munich, and Pilsner malts, plus a little Chocolate malt combined together in an open fermentaton. Fruity New Zealand hops compliment the melanoidins, spicy clove-like phenols and bubblegum esters. Rouse the yeast before serving or risk offending the brewing gods.
Our annual harvest ale combines handpicked local pears and pumpkins with the subtle banana and clove flavours of our open-fermented weizen yeast. Decoction mashing accentuates the malted wheat while cinnamon and nutmeg bring out the flavours of the harvest. Brewed to celebrate the Fall harvest on Vancouver Island, this brew is dedicated to our amazing local farmers.

There are two new brewers in Victoria. One crafts his science with malt, hops, & yeast, the other with berries from the Coffee shrub. Kalen selected a coffee from Ethiopia with exceptional fruit qualities and cold brewed it to highlight this unique characteristic. Clay provided a strong, effervescent base and fermented it dry with Saison and Champagne yeasts. Inspired by the great fruit beers of Belgium, they look to re-define what it means to fuse these two great beverages. Bright, fruity and acidic, Shatterbier challenges preconceptions and dares to break away from the norm.
A collaboration with local award winning homebrewer, Dave Janssen. Taking inspiration from traditional saison brewers of Belgium and revivalist brewers of North America, Tempus Corvi is a mixed-fermentation saison. We let this saison rest for 5 months in French oak wine barrels where the activity of a diverse collection of Saccharomyces and Brettanomyces yeasts and lactic acid bacteria transformed the beer, adding sourness and additional complexity. With its bright acidity and light body, Tempus Corvi is a refreshing beer ready to drink now or be cellared for continued development along its own course.

Coast to Coastless Imperial ESB, and it's a collaborative effort from four Canadian brewers to celebrate the spread of the craft beer movement from coast to coast--and all of the provinces in between. Garrison Brewing Co. (NS), Microbrasserie Le Trou du Diable (QC), Flying Monkeys Craft Brewery (ON) and Phillips Brewing Co. (BC) all participated in the 'quad-laboration', coming together to craft a recipe designed to reflect Canada itself. It is an Extra Special Bitter, a style with roots that trace back to England, but as an amped up imperial version it has a strong spirit that is purely Canadian.

In days past, many British pubs contained a small, private room called a ‘Snug’, reserved for special clientele. Brewed in honor of the historic Snug Pub at Victoria’s Oak Bay Beach Hotel, this British-style IPA features a flavourful blend of crisp bitterness, delicate hop aroma and malty caramel sweetness. Bold, yet easy to drink, this beautifully-balanced ‘session’ IPA pays homage to the proud tradition of the public house. An excellent accompaniment to traditional pub fare, cured meats, spicy foods and sharp cheeses such as cheddar or gruyere.

An unusually dry and refreshing take on the Porter style. Notes of espresso and dark chocolate make this beer dark & delightful, while its crisp hop ‘snap’ keeps it from being too heavy. Before beer, it was Gruit. For more than 700 years, Gruit Ale was the brewed
beverage of medieval Europe. Like today’s beer, it was brewed with water, grain
and yeast. Unlike today’s beer, it was spiced with any number of herbs, roots and
spices. The Hop, which is now the quintessential aromatic and bittering herb of
our contemporary beers, was once only one of many herbs sometimes used by
brewers in their recipes. Saturnalia Gruit is made without hops – using wildcrafted
herbs and a little ‘magik’. Complex, fruity and herbaceous, this is a must-try
beverage in a class by itself!

Salt Spring’s Fireside Ale is a very limited winter seasonal release. Made in the
traditional English ‘Winter Warmer’ style, this ruby-coloured ale has a complex
fruity nose and flavours of cooked fruit, toffee and malt. A low hop bitterness and
slightly dry, acidic finish provides contrast to the light sweetness, which leaves

An ancient brew dating back over 4000 years, Heather Ale is most often attributed to the Picts of ancient Scotland, who are said to have drunk Heather Ale for courage before going into battle. Infused with local heather flowers and a sparing amount of hops, our Heather Ale has a mild floral & honey aroma, a slight mead or cider-like character & very light hop notes to produce a crisp finish. A light beer, best paired with fresh & delicate foods such as scallops, prawns, ceviche, goats cheese or fresh fruit. This is the ideal beer for those who prefer a lighter, more delicate brew with very little bitterness.
